Recipes for all things cooked in a mountain pie maker

Angel Pies

When looking for ideas, I came across a post and honed in on this one called Angel Pies. Being big Angel Food cake fans, this one is a perfect sweet treat with very little effort.

Brush pie iron with a little butter. Put two thin slices from a loaf of angle food cake. (The kind from the grocery store works best, as it is not as soft as the kind made at home from a box.) Use any of the following fillings:

  • cherry pie filling
  • sliced bananas with a little bit of caramel ice cream topping and some chopped walnuts
  • strawberries with a squirt of whipped cream
  • canned vanilla or chocolate pudding sprinkled with nuts

Put into pie iron and toast over campfire until done, about 7-10 minutes. Remove from iron and sprinkle with a little powdered sugar.

French Breakfast Puffs for Pie Iron

Here is a good one. I a bit different than typical sandwiches, this is a puffy pastry that tastes a bit like a donut. It will be a welcome change of pace for a breakfast or even a snack. It is super easy, but be careful with the heat. You want a delicate browning and with a hot fire, you can easily burn these.

Pineapple Inside Cake in a Pie Iron

Wow was this good. This was the close second in the dessert category. It was gooey and delicious. We actually used donuts from a local bakery called Schorr’s (fabulous homemade donuts if you are ever in West View, Pennsylvania), but any plain cake donut will do. The idea came from Campfire Kitchen’s recipe list.

Stuffed French Toast Mountain Pie

This recipe was unbelievable…something you’d expect in a restaurant, not camping. This entry was a hands down breakfast winner that you must certainly try. And, if you have leftovers, simply cook it up in single slices and top with the banana, walnuts and either syrup or confectioner sugar.

The Classic Pizza Mountain Pie

Camping Basics: Favorite Pizza Mountain Pie

This is where it all started…the classic mountain pie. Pizza. How could you go wrong?

Well, you can’t go wrong with this, but you may tire of it. We finally did after twenty years and launched the Great Mountain Pie Cook-Off to add some new ideas to our late night cooking.

But always keep the ingredients to this one handy. Something tells me someone will get a hankering for it every trip and then everyone else will want one too. There are not quantities listed, as everyone is different… some like it extra cheesy and some extra saucy. Just make it how you like.
