Camping Basics: Favorite Pizza Mountain Pie

This is where it all started…the classic mountain pie. Pizza. How could you go wrong?

Well, you can’t go wrong with this, but you may tire of it. We finally did after twenty years and launched the Great Mountain Pie Cook-Off to add some new ideas to our late night cooking.

But always keep the ingredients to this one handy. Something tells me someone will get a hankering for it every trip and then everyone else will want one too. There are not quantities listed, as everyone is different… some like it extra cheesy and some extra saucy. Just make it how you like.

Pizza Mountain Pie Recipe:

Makes 1 pie.

2 slices of bread
butter
pepperoni (5 slices or so)
pizza sauce (like Pizza Quick Sauce) (3 or 4 teaspoons will do ya)
mozzarella cheese (1/4 cup or more)

Butter one side of both slices of bread and lay them butter side down in the pie iron. Spread some pizza sauce on one side of the bread (a few teaspoons will do you, just spread it out with the back of the spoon). Add some pepperoni (most people do at least five slices, covering the sauce in a checkerboard pattern with one “dot” in the center. Sprinkle in some cheese and close the pie. Insert the pie iron into hot coals and let cook. Check for toasty bread and flip. When the second side is toasty brown, flip it out and let it cool for a few (it will be HOT!).

Mmmm. I can taste it now. De-lish.
