Here is a good one. I a bit different than typical sandwiches, this is a puffy pastry that tastes a bit like a donut. It will be a welcome change of pace for a breakfast or even a snack. It is super easy, but be careful with the heat. You want a delicate browning and with a hot fire, you can easily burn these.
French Breakfast Puff Mountain Pies

Batter
- 3 Tablespoons butter
- 1/2 cup sugar
- 1 egg
- 2 1/4 teaspoons baking powder
- 1/2 cup milk
- 1 1/2 cups flour
- pinch of nutmeg
Coating:
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
Directions
Put 1/2 cup sugar and 1/2 teaspoon cinnamon into a paper bag.
Mix all ingredients to form batter. Pour enough batter to fill the bottom cavity of a well-greased pie iron. Close cooker, latch handles and bake over medium heat, about three or four minutes on the first side, two or three minutes on the second side.
Drop hot puffs into bag and shake to coat with sugar. Delicious warm or cold.
